Mindy's Perfect Dinner Rolls

Breadmaker Recipe

1/4 c. warm water (for dissolving yeast if you choose to make it by hand)
1 c. milk
1/4 c. Shortening
2 eggs beaten
1 tsp. salt
1/4 c. sugar
4 c. flour
1 pkg. dry yeast = 2 1/2 tsp.

Add all ingredients in list order to breadmaker. Set breadmaker to dough setting. Remove immediately when dough cycle ends. Form dough into round balls and place in lightly greased baking pan (may need to sprinkle dough with flour to avoid sticking to hands). Let dough raise for approx. 1 hr. or until doubled in size. Brush tops of rolls with oil or butter prior to baking. Bake at 350 F for 15 minutes.

Burger Bundles

2 lbs. Ground Beef
1 pkg. Chicken Flavored Stove Top Stuffing
2 10.5 oz. Cans Cream of Mushroom Soup
1 Soup Can of Milk
1 tsp. Salt
1/2 tsp. Pepper

Prepare stuffing to package directions. Separate ground beef into 10 medium sized patties. Roll patties flat. Add 1/10 of stuffing to middle of beef pattie. Fold pattie over stuffing and seal ends. Lay each pattie in 9 x 12 cake pan or casserole dish. Mix soup, milk, salt, and pepper in separate bowl and pour over patties. Bake at 350 F. for 1 hour.

Perfect No-Bake Cookies

2 c. Sugar
1/2 c. Butter or Margarine
1/2 c. Milk
1/2 c. Cocoa

Bring sugar, butter, milk and cocoa to a boil in medium sauce pan stirring frequently. Let boil for 3 minutes without stirring. After 3 minutes remove from heat.

Stir in until creamy
1 tsp. Pure Vanilla Extract
1 c. Peanut Butter
(I like the Crunchy version or to mix it up, I use 1 c. Butterscotch Chips instead of Peanut Butter)

Then add
2 1/2 c. Instant Oatmeal
1 1/2 c. Coconut Flakes

Stir quickly while hot. Drop by spoonfuls on cookie sheet lined with waxed paper. Let cool before serving.

My Homemade Bisquick Mix

Basic Ingredients
6 c. Flour (sifted)
3 Tbsp. Baking Powder
1 Tbsp. Salt
1 c. Powdered Milk

Mix all dry ingredients in storage container. Stores up to 1 year dry. Try in any recipe that calls for Bisquick.

Biscuits
2 c. Dry ingredients
1/3 c. Shortening
1/4 c. Water

Preheat oven to 450 F. Cut shortening  into dry ingredients and then mix in water. Put dough on a lightly floured surface. Knead gently 5 - 6 times until dough holds together. Pat or roll out dough about 1/2 inch thick. Use a round biscuit cutter 2" - 2 1/2" in diameter. Place biscuits 1 1/2 inches apart. Bake 8-10 minutes or until evenly brown.
(You can also just roll into 1" balls and press with bottom of cup)

Buttermilk Biscuits
2 c. Dry Mix
1/4 c. Shortening
1/2 c. Buttermilk

Preheat oven to 450 F. Cut shortening  into dry ingredients. Add buttermilk and mix well. Put dough on a lightly floured surface. Knead gently 5 - 6 times until dough holds together. Pat or roll out dough about 1/2 inch thick. Use a round biscuit cutter 2" - 2 1/2" in diameter. Place biscuits 1 1/2 inches apart. Bake 8-10 minutes or until evenly brown.


Pancakes 
2 c. Dry Mix
1 egg
1/4 c. Vegetable Oil
3 Tbsp. Sugar
1/2 c. Water (may need more water if too thick)

Easy Homemade Yams

4 large yams peeled and quartered length wise
1 cup water
1/2 cup brown sugar
1/4 cup butter sliced
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
12 oz. pkg. of miniature marshmallows

Place yams in a 9" x 11" x 2" baking pan or cake pan. Pour water over yams. Lay butter across yams. Sprinkle brown sugar, cinnamon, ginger, and nutmeg on top. Cover with aluminum foil and bake at 350 F for 30-40 minutes or until soft. Carefully remove aluminum foil and stir yams. Place marshmallows on top and bake another 5-10 minutes or until browned.

Perfect recipe for a large family or group.
